We often have so much zucchini come out of our garden each year that we don’t know what to do with it all. We love to eat it in stir fry, we give it away to friends and family, and make zucchini bread and muffins to freeze. Usually there is still zucchini that goes to waste. I was talking to my friend Jen the other day and she told me that you can shred and freeze it. Brilliant!
Here’s what I did. I washed the zucchinis and cut them up so they would fit in the shredder. There’s no need to peel them. I then fed them through my Kitchen Aid shredder. Another reason I love me Kitchen Aid. You could also shred them by hand with a hand held grater. 
My friend Jen recommended measuring before freezing to make it easier when I wanted to use it in a recipe. So I measured 3 cups and put it into freezer containers. You could also use freezer bags. I labeled the containers Zucchini, 3 cups, 8/09 and they were ready to freeze.
So now I’ll be able to bake fresh zucchini muffins and bread in the middle of the winter.
