<p>We made Blueberry Jam on Saturday.  I literally whipped up two batches in less than 30 minutes thanks to my friend Jonna.  I used the Ball Fruit Freezer Jam Pectin.</p>
<ol>
<li>Washed the blueberries</li>
<li>Mashed blueberries</li>
<li>Measure 4 cups of mashed blueberries</li>
<li>In a separate bowl mix 1.5 cups sugar and the pectin packet together</li>
<li>Pour the mashed blueberries into the sugar/pectin mixture<a href="http://givemeneither.com/wp-content/uploads/2010/07/Picture-413.png"><img class="alignnone size-full wp-image-23896" title="Ball Fruit Freezer Jam Pectin" src="http://givemeneither.com/wp-content/uploads/2010/07/Picture-413.png" alt="" width="97" height="150" /></a></li>
<li>Mix for 3 minutes</li>
<li>Ladle blueberry jam into half pint jars (make sure to leave head space for expansion in freezing)</li>
<li>Cover with lids and rings</li>
<li>Let sit for 30 minutes</li>
<li>Put in the fridge for up to 1 week or freeze for up to 1 year</li>
</ol>
<p>We had it on homemade bread yesterday.  Delicious and not to sweet.</p>

<p><strong>Rhubarb Coffee Cake</strong></p>
<p>1/2 cup butter<br />
1 egg<br />
1 tsp. baking soda<br />
1 c buttermilk<br />
2 c. rhubarb (small pieces)<br />
1 1/4 c. sugar<br />
2 c. flour<br />
1/2 tsp. salt<br />
1 tsp. vanilla</p>
<p>Topping:</p>
<p>1 tsp. cinnamon<br />
1/2 c. sugar<br />
2 Tbs. butter<br />
1/2 c. nuts (optional)</p>
<p>Preheat the oven to 350 degrees.</p>

<p>Preheat oven to 250 degrees</p>
<p>Spray two pans (a roasting pan and a 10 x 15 pan) with non-stick cooking spray</p>
<p>Pop (2) 1/2 cup batches of popcorn directly into prepared pans</p>

<p style="text-align: left;">One of my favorite things to do is go out to eat, someone else cooks it, cleans up and all I have to do is <strong>enjoy it</strong>!  But, I always feel sick once the bill comes and I realize I have paid as much for one meal as a whole cart of grocery’s .   In order for me to stay home and raise my kids, eating out is one of the things we have cut out.  We try to fit it in our budget at least once a month.  So instead I have learned to make some of our favorite restaurant meals at home.   One of our favorites is the wonderful sausage, potato soup at Olive Garden.  I made it this weekend for my family, and I thought I would pass this thrifty recipe on to you! This recipe will make a LARGE pot of soup and normal feeds my family a few meals. Or we share with friends!</p>
<p style="text-align: center;"><img class="aligncenter" title="010" src="http://athriftymom.com/wp-content/uploads//2009/09/010-300x225.jpg" alt="010" width="300" height="225" />Start out  with  1.5 lb of  your favorite brand of Italian sausage.  I always buy the mild, but if you like it a little spicy get the hot. This is my family’s favorite, we find it at Walmart.</p>
<p style="text-align: center;"><img class="aligncenter" title="009" src="http://athriftymom.com/wp-content/uploads//2009/09/0091-300x225.jpg" alt="009" width="300" height="225" />Put the sausage and one medium onion (diced) into a large soup pot.  On Medium heat brown the sausage and onion.</p>
<p style="text-align: center;"><img class="aligncenter" title="012" src="http://athriftymom.com/wp-content/uploads//2009/09/0121-300x225.jpg" alt="012" width="300" height="225" />I like to let mine get a little “crisp” around the edges, it seems to hold together better in the soup.</p>
<p style="text-align: center;"><img class="aligncenter" title="013" src="http://athriftymom.com/wp-content/uploads//2009/09/0131-225x300.jpg" alt="013" width="225" height="300" />Once the meat is cooked you will need to drain it, because it will  have a lot of grease on it. You can even rinse it if you want, but I just normally drain it.  I like to have a little bit to help flavor the soup.  ( One time I did not drain it and the soup was really oily…did not work so well)</p>
<p style="text-align: center;"><img class="aligncenter" title="011" src="http://athriftymom.com/wp-content/uploads//2009/09/0111-300x225.jpg" alt="011" width="300" height="225" />You will need 6-8 medium potatoes.  Wash them really well, and then dice with the skin on.</p>
<p style="text-align: center;"><img class="aligncenter" title="014" src="http://athriftymom.com/wp-content/uploads//2009/09/0142-300x225.jpg" alt="014" width="300" height="225" />To the pot you just cooked the Sausage in add</p>
<ul style="text-align: center;">
<li>6-8 cups chicken broth ( if you do not have it you can substitute water, but broth tastes MUCH better)</li>
<li>the diced potatoes with skin on</li>
<li>3/4 Teaspoon Salt</li>
<li>3/4 Teaspoon black pepper ( if you want to spice up ad some red pepper flakes 1/2 teaspoon)</li>
</ul>
<p style="text-align: center;"><img class="aligncenter" title="015" src="http://athriftymom.com/wp-content/uploads//2009/09/0151-300x225.jpg" alt="015" width="300" height="225" />While the pan is still cool add in 3 cups of  heavy cream ( you can substitute with whole milk or half and half , but the cream is best)</p>
<p style="text-align: center;">It is important to add this while the broth is still cool, if you add it to a boiling pot the cream will curdle</p>
<p style="text-align: center;"><img class="aligncenter" title="016" src="http://athriftymom.com/wp-content/uploads//2009/09/0161-300x225.jpg" alt="016" width="300" height="225" /></p>
<p style="text-align: center;">Now add the drained, cook sausage back to the pot, and turn on medium heat.</p>
<p style="text-align: center;"><img class="aligncenter" title="019" src="http://athriftymom.com/wp-content/uploads//2009/09/0192-300x225.jpg" alt="019" width="300" height="225" />Slowing bring to a boil over medium heat, stirring every few minutes so you do not scald the cream.</p>
<p style="text-align: center;">Once it comes to a boil turn down to medium / low heat so it can simmer for 20 minutes</p>
<p style="text-align: center;"><img class="aligncenter" title="017" src="http://athriftymom.com/wp-content/uploads//2009/09/0171-300x225.jpg" alt="017" width="300" height="225" />While your soup in simmering, wash your Kale very well, it has lots of green leaves for dirt to hide in.</p>
<p style="text-align: center;">I had never eaten or heard of kale before this recipe, but we LOVE it now!</p>
<p style="text-align: center;"><img class="aligncenter" title="018" src="http://athriftymom.com/wp-content/uploads//2009/09/018-300x225.jpg" alt="018" width="300" height="225" />Once you have washed it, take off the stock, it is not very good for eating.  You just want the Kale leaf.  Then chop the kale into small bite sized pieces.</p>
<p style="text-align: center;">You will need about 6 cups, uncooked.</p>
<p style="text-align: center;"><img class="aligncenter" title="020" src="http://athriftymom.com/wp-content/uploads//2009/09/0201-300x225.jpg" alt="020" width="300" height="225" />Once the soup has been simmering for 20  min, add the  6 cups of chopped kale, cover again and<strong> </strong><strong>simmer another 30 mins.</strong></p>
<p style="text-align: center;">You will see the soup has a orange look to it, that is from the little bit of grease left from cooking the sausage, it is just a light layer but stays on top the pot.  If  you rinse the meat you will not get that thin layer, it is personal choice, taste fine either way.</p>

I found this recipe in this <a onclick="javascript:pageTracker._trackPageview('/outbound/article/www.amazon.com');" href="http://www.amazon.com/Recipes-Old-Mill-Sarah-Myers/dp/1561481769">cookbook</a> Recipes from the Old Mill: Baking with Whole Grains by Sarah E. Meyers and Mary Beth Lind.</p>
<p>Preheat oven to 350 degrees.</p>
<p>Mix together until well blended:<br />
1/3 c. brown sugar<br />
2/3 c. crunchy peanut butter<br />
3/4 c. honey<br />
2 Tbsp. hot water (optional)<br />
2 tsp. vanilla</p>
<p>Stir in:<br />
2.5 c. rolled oats<br />
1 c. whole wheat flour<br />
1/4 c. wheat germ<br />
1/2 c. sunflower seeds or nuts<br />
1 Tbsp. sesame seeds (I didn’t add these b/c I didn’t have any)<br />
1 c. chocolate chips<br />
1/2 c. raisins or other dried fruit<br />
1/2 c. coconut (optional)</p>
<p>Press mixture into greased 9?x13? pan.<br />
Bake at 350 degrees for 15-20 minute (lightly brown).  Cut while warm.</p>

<p>Preheat oven to 400 degrees</p>
<ul>
<li>1 3/4 c. all purpose flour</li>
<li>1/2 c. sugar</li>

<li>1/2 tsp. salt</li>
<li>1/2 c. chocolate chips</li>
<li>1 egg</li>
<li>1/4 c. cooking oil (I substitute applesauce)</li>
<li>1/4 c. milk</li>
<li>1 c. mashed bananas (3 medium)</li>
</ul>
<p>Mix dry ingredients. Make a well and set aside. Beat egg until frothy. Mix in oil and milk. Pour this mixture into well along with the bananas. Stir until moistened. Batter will be lumpy.<br />
Put into muffin tins.</p>
<p>Bake at 400 degrees for 20-25 minutes (my oven only takes about 15 minutes)</p>

<p>Here’s a beer bread recipe that my family loves and the best part about it is how simple it is.</p>
<p>Mix</p>
<ul>
<li>3 cups all-purpose flour</li>
<li>1 Tbsp baking powder</li>
<li>1 tsp. salt</li>
<li>1/4 cup white sugar</li>
</ul>
<p>Add 1 bottle of beer (I love it with Leinenkugel Honey Weiss) and mix it all together.  It is a very thick batter.</p>
<p>Put into a greased 9×5 loaf pan.</p>
<p>Bake at 350 degrees for 50 to 60 minutes.  I tend to keep an eye on it.  When I stick a knife in it and it comes out clean, I take it out of the oven.</p>
<p>It tastes great with butter, honey, peanut butter, or cheese.  If you have any left for the next day, it makes a wonderful bread to use for grilled cheese.  We just ate it last week with chili.  Yum!</p>
<p>You can substitute 3 cups self-rising flour for the flour, salt, and baking powder, but I never have self-rising flour in the house so I changed the recipe.</p>

<div>Looking for a cheap, easy recipe to try out? This is the one for you. It was really good. Last night, I had hamburger, mac-n-cheese, and a can of tomatoes and had no clue what I was going to do with them. This is usually the story of my life. This is what we call “dinner on the fly!!”</div>
<p><strong>Easy Cheeseburger Mac-N-Cheese (feeds 6)</strong></p>
<div>1 lb. Hamburger – ($2.27)</div>
<div>2 boxes Mac-n-cheese (any brand) – ($0.66 for 2)</div>
<div>1 can diced tomatoes – ($0.34 Muir Glen Brand)</div>
<div>1/2 onion ($0.15)</div>
<div>kosher salt to taste</div>
<div>pepper to taste</div>
<div>garlic seasoning to taste</div>
<div>no salt seasoning to taste</div>
<div><strong>Total Cost minus seasoning cost = $3.42 to feed 6 people</strong></div>
<div>It is very simple to do:</div>

<p>Brown hamburger meat, onion, and seasonings together. Cook and prepare Mac-n-cheese as directed on the box. After the meat is done, add can of tomatoes, a little more seasoning, and dump mac-n-cheese in a large electric skillet.Viola, dinner is done!!</p>
